These quick chewy chocolate chip cookies are everything you want in a recipe—fast, reliable, and genuinely delicious. No complicated techniques, no fancy ingredients, just a bowl, a spoon, and 25 minutes to cookie happiness.

Ingredients

Scale
  • 1 cup (2 sticks / 226g) unsalted butter, melted
  • 1 cup (200g) light brown sugar, packed
  • ½ cup (100g) granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups (340g) semi-sweet chocolate chips
  • Optional: flaky sea salt for sprinkling
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 375°F (190°C). Position the racks in the upper and lower thirds of the oven if baking two sheets at once. Line two baking sheets with parchment paper or silicone mats.
  2. Melt the butter in a microwave-safe bowl in 30-second bursts until mostly melted, then stir until fully melted. Let cool for a minute or two.
  3. In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk vigorously for about 30 seconds until smooth and slightly thickened.
  4. Add the egg and vanilla extract. Whisk until fully combined and glossy, about 20 seconds.
  5. In a separate small bowl, whisk together the flour, baking soda, and salt.
  6. Pour the flour mixture into the butter-sugar mixture. Fold gently with a rubber spatula or wooden spoon until just combined—stop as soon as no streaks of flour remain.
  7. Fold in the chocolate chips (and nuts if using) with a few gentle strokes. The dough will be thick and slightly sticky.
  8. Let the dough rest for 10 minutes. Cover the bowl with a clean towel or plastic wrap and let sit on the counter.
  9. Scoop the dough into balls using a 2-tablespoon cookie scoop or two spoons. Place about 2 inches apart on the prepared baking sheets. You should get about 24 cookies total (12 per sheet).
  10. Bake for 10 to 12 minutes, rotating the sheets halfway through (swap top to bottom and front to back). The cookies are done when edges are golden brown and centers still look slightly soft and underdone.
  11. Let the cookies rest on the hot baking sheet for 5 minutes, then transfer to a cooling rack. Optionally, press a few extra chocolate chips into the tops of warm cookies.
  12. Sprinkle with flaky sea salt (optional but highly recommended).

Notes

For best results, use a kitchen scale for flour (250g). Don’t skip the 10-minute rest—it helps prevent spreading and creates a chewier texture. Underbake slightly for softer cookies. Store in an airtight container at room temperature for up to 5 days; place a slice of bread in the container to keep them soft. Dough can be frozen for up to 3 months.
