Quick and easy roasted butternut squash cubes with garlic and herbs, perfect for weeknights or potlucks. Caramelized edges and tender insides make this a crowd-pleaser.

Ingredients

Scale
  • 1 medium butternut squash (about 2–2.5 pounds)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the squash: Cut off both ends, stand upright, and slice down to remove the skin in strips. Cut in half lengthwise and scoop out seeds and stringy bits.
  3. Cube the squash: Cut each half into 1-inch thick slices, then into 1-inch strips, and finally into 1-inch cubes.
  4. Mix the seasoning: In a large mixing bowl, combine olive oil, minced garlic, dried rosemary, dried thyme, dried oregano, salt, pepper, and red pepper flakes if using.
  5. Toss the squash: Add cubed squash to the bowl and toss until evenly coated.
  6. Arrange on a baking sheet: Line with parchment paper if desired. Spread squash cubes in a single layer with space between each piece.
  7. Roast for 25-30 minutes, flipping halfway through, until edges are deep golden brown and caramelized and squash is fork-tender.
  8. Serve immediately.

Notes

For best results, don’t crowd the pan. Crush dried herbs between your fingers before adding to release oils. Let squash come to room temperature before cutting for easier handling. Pre-cut squash from the store works in a pinch but may cook faster.
