Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 2/3 cup (133g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/4 cups (281g) all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 cups (180g) powdered sugar
  • 2–3 tablespoons milk or heavy cream
  • 1/2 teaspoon vanilla extract (for icing)
  • Food coloring (optional)
  • Sprinkles or sanding sugar (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Place one rack in the center of the oven. Line your baking sheets with parchment paper or silicone mats. Do not grease the sheets.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed for 2-3 minutes, until light and fluffy. Scrape down the sides of the bowl halfway through.
  3. Beat in the egg, vanilla extract, and almond extract on low speed until just combined. Scrape the bowl again to ensure even distribution.
  4. In a separate bowl, whisk together the flour and salt. Gradually add the flour mixture to the wet ingredients, mixing on low speed. Stop as soon as the dough comes together.
  5. Fit your cookie press with the desired disk. Fill the press with dough. Hold the press perpendicular to the baking sheet, press down firmly, and lift straight up.
  6. Place the cookies about 1 inch apart on the prepared baking sheets. Bake for 8-10 minutes, until the edges are just barely golden. The centers should look set but not brown.
  7. Let the cookies cool on the baking sheet for 2 minutes, then transfer them to a wire cooling rack. Cool completely before icing.
  8. In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk or cream, and vanilla extract. Add more milk, 1 teaspoon at a time, until the icing is thick but pourable.
  9. Transfer the icing to a small piping bag or a zip-top bag with a tiny corner snipped off. Drizzle the icing over the cooled cookies in a zigzag pattern. Add sprinkles immediately. Let the icing harden completely, about 30 minutes.

Notes

Temperature is key: dough should be cool but pliable. If dough gets too warm, chill for 10-15 minutes. Don’t skip the almond extract—it adds depth. Press firmly and lift straight up when using the cookie press. For best results, bake one sheet at a time in the center of the oven. Cookies taste even better the next day.
