This moist and flavorful quick bread combines ripe persimmons, toasted walnuts, and a bold amount of cinnamon for a cozy fall treat. It’s easy to make with simple ingredients and perfect for breakfast, brunch, or a snack.

Ingredients

Scale
  • 3–4 ripe Fuyu persimmons (about 1 cup puree)
  • 1 ¾ cups (210g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) packed light brown sugar
  • ⅓ cup (80ml) vegetable oil
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (120g) walnuts, roughly chopped and toasted

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease the paper and exposed pan sides.
  2. Wash, peel, and chop persimmons. Puree in a food processor or blender until smooth. Measure 1 cup of puree.
  3. Spread chopped walnuts on a small baking sheet and toast in the preheated oven for 5-7 minutes until fragrant. Let cool completely.
  4. In a medium bowl, whisk together flour, cinnamon, baking soda, baking powder, and salt.
  5. In a large bowl, whisk together granulated sugar, brown sugar, and vegetable oil. Add eggs one at a time, whisking well after each. Stir in vanilla and persimmon puree.
  6. Add dry ingredients to wet ingredients and stir with a rubber spatula until just combined (a few streaks of flour are okay).
  7. Gently fold in toasted walnuts until evenly distributed.
  8. Pour batter into prepared loaf pan and spread evenly. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let bread cool in pan for 10 minutes, then lift out using parchment and transfer to a wire rack. Cool completely before slicing (about 1-2 hours).

Notes

For best flavor, let the bread rest overnight wrapped tightly in plastic wrap. The flavors meld and the texture becomes even more moist. Toasting the walnuts is essential for maximum crunch and nutty flavor. Use room temperature eggs for better incorporation.
