These wholesome no-bake granola bites with chocolate chips are quick, easy, and made with simple pantry ingredients. Perfect for busy mornings or a healthy snack, they offer a chewy texture with pockets of melted chocolate in every bite.

  • 2 cups old-fashioned rolled oats
  • 1 cup creamy peanut butter
  • 1/3 cup honey
  • 1/2 cup mini chocolate chips
  • 1/2 cup unsweetened shredded coconut
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add 2 cups of old-fashioned rolled oats, 1/2 cup of unsweetened shredded coconut, and 2 tablespoons of ground flaxseed. Stir to evenly distribute the flax.
  2. Add the wet ingredients: Scoop 1 cup of creamy peanut butter into the center of the dry mixture. Drizzle 1/3 cup of honey over the top. Add 1 teaspoon of vanilla extract and a generous pinch of sea salt. Do not stir yet.
  3. Mix until combined: Start stirring from the center, working outward. Mix vigorously for about 2 minutes until you have a cohesive, slightly sticky dough. If too dry, add another tablespoon of honey; if too wet, add a tablespoon of oats.
  4. Fold in the chocolate chips: Sprinkle 1/2 cup of mini chocolate chips over the dough. Fold them in gently with a spatula until evenly distributed.
  5. Chill the mixture: Place the bowl in the refrigerator for 15-20 minutes to firm up the mixture. Meanwhile, line a baking sheet with parchment paper.
  6. Roll into bites: Remove the bowl from the fridge. Using slightly damp hands, scoop out about 1 tablespoon of mixture and roll it into a smooth ball. Place each ball on the parchment-lined baking sheet. You should get about 20-24 bites.
  7. Chill again: Place the baking sheet in the refrigerator for at least 30 minutes to allow the bites to set completely.

Notes

For best results, use room temperature peanut butter and honey. Wet hands prevent sticking when rolling. The bites taste even better the next day after flavors meld. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
