lighter smoky ranch chex mix - featured image

This lighter version of classic Chex Mix is baked instead of fried, using a smart coating technique with buttermilk powder and liquid smoke for a creamy ranch flavor with less fat. It’s perfectly crunchy, smoky, and tangy—ideal for game day, snacking, or any occasion.

Ingredients

Scale
  • 4 cups Rice Chex cereal
  • 4 cups Corn Chex cereal
  • 2 cups Wheat Chex cereal (or use more Rice Chex for gluten-free)
  • 2 cups mini pretzels (gluten-free pretzels work great)
  • 1 cup mixed nuts (roasted, unsalted almonds and cashews recommended)
  • 1 cup rye chips or bagel chips (optional)
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 tablespoons buttermilk powder (SACO brand recommended)
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon liquid smoke
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 250°F (120°C).
  2. In a large mixing bowl, combine Rice Chex, Corn Chex, Wheat Chex, pretzels, nuts, and rye chips. Toss gently with hands to distribute evenly.
  3. In a small bowl, whisk together buttermilk powder, smoked paprika, garlic powder, onion powder, dried dill, dried parsley, cayenne (if using), salt, and black pepper until no lumps remain.
  4. In a separate small bowl or measuring cup, combine melted butter, olive oil, and liquid smoke. Stir together.
  5. Drizzle the butter-oil mixture over the dry ingredients. Toss gently with a spatula or hands until every piece is lightly and evenly coated.
  6. Sprinkle the seasoning mixture over the coated cereal in two additions, tossing after each addition to ensure even coverage.
  7. Line a large rimmed baking sheet (half-sheet pan, 18×13 inches) with parchment paper. Spread the mixture in a single, even layer.
  8. Bake for 45 minutes, stirring gently every 15 minutes and rotating the pan front to back for even browning.
  9. After 45 minutes, check for doneness: the mix should be dry and fragrant. It will still feel slightly soft when warm but will crisp as it cools. If desired, bake for 5-10 more minutes for extra crunch.
  10. Remove from oven and let cool on the pan for 10 minutes, then transfer to a cooling rack or fresh parchment. Cool completely (about 30 minutes) before storing.
  11. Gently break apart any clumps that formed during cooling.

Notes

For best results, use good quality smoked paprika. Buttermilk powder (SACO brand) gives the smoothest result. For dairy-free, use vegan butter or all olive oil and skip buttermilk powder. Let cool completely before storing to maintain crunch. Flavor improves after a day or two.
