Ingredients

Scale
  • 8 oz Brie (double-cream preferred)
  • 6 oz Aged Cheddar (sharp white cheddar)
  • 4 oz Goat Cheese Log (e.g., Chavrie brand)
  • 4 oz Prosciutto (thinly sliced)
  • 4 oz Genoa Salami (sliced into thin rounds, e.g., Columbus brand)
  • 3 oz Soppressata (optional, for a spicy kick)
  • 2 Apples (1 Honeycrisp, 1 Granny Smith)
  • 1 Pear (Bosc or Anjou)
  • 1 cup Red Grapes (seedless)
  • 1 cup Fresh Figs (halved; substitute with dried figs or dates if unavailable)
  • 1/2 cup Dried Apricots
  • 1 cup Mixed Nuts (salted almonds, candied pecans, walnuts)
  • 1 cup Crackers (mix of buttery crackers like Ritz and water crackers; gluten-free rice crackers optional)
  • 1 Baguette (sliced into thin rounds and lightly toasted)
  • 2 tbsp Honey (local honey preferred)
  • Fresh Rosemary Sprigs (for garnish)
  • Lemon juice (to prevent apple browning)

Instructions

  1. Prep the Fruit (5 minutes): Wash and pat dry the grapes. Slice apples and pears into thin wedges; squeeze lemon juice over apple slices to prevent browning. Halve the figs. Arrange all fruit on a plate and set aside.
  2. Slice the Cheese (3 minutes): Remove brie from fridge 15 minutes before assembling. Slice cheddar into thin triangles. Slice goat cheese log into rounds (if it crumbles, press pieces back together).
  3. Arrange the Meats (3 minutes): Fold prosciutto slices into loose ribbons. Roll salami slices into cylinders or fold in half. Place in small piles on the board, leaving space for cheese and fruit.
  4. Add the Cheese (2 minutes): Place brie wedge in the center or slightly off-center. Arrange cheddar triangles and goat cheese rounds around it, leaving gaps for fruit and nuts.
  5. Fill in with Fruit (3 minutes): Scatter apple slices, pear slices, and fig halves in gaps between cheese and meat. Add small clusters of grapes and a pile of dried apricots.
  6. Add Crunch (2 minutes): Fill remaining spaces with mixed nuts and crackers. Fan baguette slices along the edge of the board.
  7. Garnish and Serve (2 minutes): Drizzle honey over brie and goat cheese. Tuck rosemary sprigs around the board. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 2 hours. If refrigerated, let sit at room temperature for 20 minutes before serving.

Notes

For best flavor, let cheese come to room temperature before serving. To prevent apple browning, squeeze lemon juice over slices or cover with a damp paper towel. The board can be prepped up to 24 hours in advance; store ingredients separately and assemble just before serving.
