These spooky easy mummy meatball sub bites are the perfect Halloween snack—quick, fun, and filling. Made with frozen meatballs, Pillsbury biscuit dough, and candy eyeballs, they’re a crowd-pleaser that keeps hungry goblins satisfied before the candy rush.

Ingredients

Scale
  • 1 (16 oz) package frozen fully cooked meatballs
  • 1 (16.3 oz) can Pillsbury Grands! Biscuits
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1 large egg, beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 24 candy eyeballs (optional)
  • 1 tablespoon cream cheese, softened (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Thaw the meatballs slightly by microwaving for 30-60 seconds, just until thawed on the outside. Pat dry with a paper towel.
  3. Open the can of biscuits and separate the 8 biscuits. Cut each biscuit into 3-4 long strips, about 1/2 inch wide.
  4. Wrap 2-3 strips of biscuit dough around each meatball, leaving a small gap in the center for the eyes. Press the ends to seal. Place seam side down on the prepared baking sheet.
  5. In a small bowl, beat the egg. Brush each mummy with the egg wash. Sprinkle with garlic powder and Italian seasoning.
  6. Bake for 12-15 minutes, until the dough is golden brown and cooked through.
  7. While still warm, use a small dab of cream cheese to attach two candy eyeballs to the gap in the dough.
  8. Serve with warm marinara sauce for dipping.

Notes

For best results, use full-size frozen meatballs. Keep biscuit dough cold for easier handling. Don’t skip the egg wash for a golden finish. If the dough strips come apart, seal the ends more firmly. For a gluten-free version, use gluten-free biscuit dough. For dairy-free, use vegan cheese and plant-based meatballs.
