  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing, plus more for drizzle
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup sour cream
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chipotle chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 cup buttermilk
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream (for drizzle)
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon garlic powder (for drizzle)
  • 1/2 teaspoon onion powder (for drizzle)
  • 1/4 teaspoon salt (for drizzle)
  • 1/8 teaspoon black pepper (for drizzle)
  • Celery sticks, for serving
  • Carrot sticks, for serving
  • Tortilla chips or potato chips, for serving
  • Toasted baguette slices or crostini, for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Shred the chicken using two forks; you need about 2 cups.
  3. Soften cream cheese by letting it sit at room temperature for 20 minutes or microwaving for 15-20 seconds.
  4. Make the ranch drizzle: In a small bowl, whisk together buttermilk, mayonnaise, sour cream, dill, parsley, garlic powder, onion powder, salt, and pepper. Refrigerate until ready to use.
  5. In a medium skillet over medium heat, combine softened cream cheese and sour cream. Stir constantly until smooth and glossy, about 2-3 minutes.
  6. Add buffalo sauce, smoked paprika, chipotle chili powder, garlic powder, and onion powder. Stir until well combined and uniform in color.
  7. Fold in shredded chicken and cook for 2 minutes, stirring to coat.
  8. Reduce heat to low. Add shredded cheddar and Monterey Jack cheese. Stir until fully melted and dip is thick and creamy, about 3-4 minutes. Add a splash of milk or chicken broth if too thick.
  9. Transfer dip to an 8×8-inch baking dish or oven-safe skillet. Spread evenly.
  10. Bake for 15-18 minutes until bubbly around edges and lightly golden. For a browned top, broil for 1-2 minutes.
  11. Let cool for 2-3 minutes. Drizzle ranch dressing over the top in a zigzag pattern. Garnish with fresh parsley or smoked paprika if desired. Serve immediately with celery, carrots, chips, or baguette slices.

Notes

For best results, shred your own cheese to avoid graininess. The ranch drizzle can be doubled and kept in the fridge for up to a week. The dip can be made ahead and refrigerated for up to 2 days; add 5-7 minutes to baking time if starting cold. To keep warm at a party, transfer to a slow cooker on warm setting.
