A creative and impressive charcuterie board arranged in the shape of a turkey, perfect for Friendsgiving or any gathering. This easy-to-assemble board features a variety of meats, cheeses, fruits, and nuts, designed to be a centerpiece that allows you to enjoy your guests instead of being stuck in the kitchen.

Ingredients

Scale
  • 1 pound salami or pepperoni, sliced
  • 1 pound prosciutto or ham, thinly sliced
  • 1 cup cheese cubes (cheddar or gouda)
  • 1 cup cheese slices (provolone or Swiss, cut into small triangles)
  • 1 cup mixed olives (green and black, pitted)
  • 1 cup cherry tomatoes, halved
  • 1 cup grapes (red and green)
  • 1 cup pickles (cornichons or dill slices)
  • 1 cup nuts (almonds or walnuts, toasted)
  • Fresh rosemary sprigs (for decoration)
  • 1 small bowl honey or fig jam (for dipping)
  • 1 box crackers or sliced baguette (for serving)

Instructions

  1. Prep the ingredients (10 minutes): Slice the cheese into cubes and triangles. Halve the cherry tomatoes and grapes. If using nuts, toast them in a dry pan over medium heat for 2-3 minutes until fragrant. Set everything aside in separate bowls.
  2. Arrange the turkey body (5 minutes): Place your board on a flat surface. Start by creating the turkey body in the center. Use the salami slices to form an oval shape, overlapping them slightly. Layer the prosciutto on top, folding it into small ribbons. Add the cheese cubes in the center to create a ‘stuffed’ look.
  3. Create the turkey feathers (10 minutes): Working from the body outward, arrange the olives, cherry tomatoes, grapes, pickles, and nuts in a fan shape. Start with larger items like olives and tomatoes near the body, then layer smaller items like nuts and pickles toward the edges. This creates a gradient effect that mimics feathers.
  4. Add the head and neck (5 minutes): Use a small piece of cheese (like a triangle of provolone) for the head. Place it at the top of the body. For the neck, use a strip of prosciutto or a long slice of salami. Add two small olives for eyes, and a small piece of red pepper for the beak.
  5. Garnish and serve (5 minutes): Tuck fresh rosemary sprigs around the board for a festive look. Place the small bowl of honey or fig jam near the body. Arrange crackers or baguette slices around the edges. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

Prep all ingredients the night before and store in separate containers. Arrange the board up to 2 hours before serving, cover with plastic wrap, and refrigerate. Take out 30 minutes before serving to let cheese come to room temperature. If the board looks sparse, fill gaps with extra nuts or small cookies. Use room-temperature cheese for best texture. Avoid using too many similar colors; add pops of color with red peppers, green olives, or purple grapes.
