A quick and easy summer slushie made with fresh watermelon, lemon juice, mint, and ice. Perfectly balanced, refreshing, and naturally sweetened for a cool treat.

  • 4 cups watermelon, cubed and seeds removed
  • 1/2 cup fresh lemon juice (about 34 lemons)
  • 1 cup cold water
  • 23 tablespoons granulated sugar (adjust to taste; can substitute honey or agave)
  • 1015 fresh mint leaves, gently bruised
  • 2 cups ice cubes

Instructions

  1. Cut about 4 cups of fresh watermelon into cubes, removing any seeds.
  2. Roll lemons on the counter, cut in half, and juice until you have about 1/2 cup fresh lemon juice, discarding seeds.
  3. In a blender, combine watermelon cubes, fresh lemon juice, cold water, granulated sugar, and bruised mint leaves.
  4. Add ice cubes to the blender.
  5. Pulse the blender on high for 1-2 minutes until the ice is crushed and the mixture is smooth but still icy.
  6. Taste and adjust sweetness by adding more sugar or honey if needed; blend again briefly.
  7. If too thick, add a splash of cold water and pulse once more.
  8. Pour into tall glasses, garnish with a sprig of fresh mint and a lemon wedge, and serve immediately.

Notes

Use ripe watermelon for best sweetness and juiciness. Fresh lemon juice is essential for brightness. Bruise mint leaves gently to release flavor without bitterness. Pulse blender to maintain icy texture. Adjust sugar last to taste. Chill watermelon and lemon juice before blending for best results. Can add sparkling water before serving for fizz. For make-ahead, blend all except ice and freeze; blend with ice before serving.
