These quick and easy soft pretzel rolls are a weeknight hero, ready in under an hour with simple pantry ingredients. They’re golden, soft, and pillowy, perfect with a bowl of soup or slathered with the accompanying easy mustard butter.

  • 1 ½ cups (360 ml) warm water (about 105-115°F)
  • 1 tablespoon (9g) active dry yeast
  • 1 tablespoon (12g) granulated sugar
  • 3 ½ cups (440g) all-purpose flour
  • 1 teaspoon (6g) salt
  • 4 tablespoons (56g) unsalted butter, melted and slightly cooled
  • 2 tablespoons (28g) unsalted butter, melted (for topping)
  • Flaky sea salt (for sprinkling)
  • ½ cup (1 stick / 113g) unsalted butter, softened (for mustard butter)
  • 2 tablespoons (30g) whole-grain mustard
  • 1 tablespoon (15g) honey
  • ¼ teaspoon salt (for mustard butter)
  • Pinch of black pepper, freshly ground

Instructions

  1. Proof the yeast: In a large mixing bowl, combine warm water, sugar, and yeast. Stir and let sit for about 5 minutes until foamy.
  2. Mix the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until a shaggy dough forms. Add remaining 1 ½ cups flour, half cup at a time, until dough pulls away from sides of bowl.
  3. Knead: Knead by hand on a floured surface for 5 minutes or use a stand mixer with dough hook until smooth and elastic.
  4. First rise: Let dough rest in bowl, covered with a towel, for just 10 minutes. It will puff slightly but not double.
  5. Shape the rolls: Turn dough onto a lightly floured surface. Divide into 8 equal pieces. Fold edges of each piece into center, pinch to seal, then roll into a smooth ball. Place seam-side down on parchment-lined baking sheet.
  6. Second rise: Cover shaped rolls with towel and let rest for 10-15 minutes. Preheat oven to 400°F (200°C).
  7. Score and bake: Slash a deep ‘X’ or single line across top of each roll. Bake for 15-18 minutes until golden brown and hollow-sounding when tapped.
  8. Butter bath: Immediately brush hot rolls with melted butter and sprinkle with flaky sea salt. Let cool on baking sheet for at least 5 minutes before serving.
  9. Make mustard butter: In a small bowl, combine softened butter, whole-grain mustard, honey, salt, and pepper. Mix until smooth.

Notes

Don’t skip scoring the rolls; it allows steam to escape and prevents bursting. Use a thermometer for water temperature to ensure yeast activates properly. The dough should be slightly sticky; avoid adding too much flour. Mustard butter can be made ahead and stored in the fridge for up to a week. Rolls freeze beautifully for up to 3 months.
