This set-and-forget slow cooker honey garlic chicken is the ultimate weeknight dinner. Tender chicken thighs are cooked low and slow in a sweet and savory honey garlic sauce, then finished with a glossy glaze.

Ingredients

Scale
  • 2 lbs (900g) boneless, skinless chicken thighs
  • 1/2 cup (170g) honey
  • 1/3 cup (80ml) low-sodium soy sauce
  • 6 cloves garlic, minced (divided)
  • 2 tablespoons (30ml) rice vinegar
  • 1 tablespoon (15ml) sesame oil
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Sliced green onions (for garnish)
  • Toasted sesame seeds (for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels and place them in a single layer in the slow cooker.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, and half of the minced garlic. Pour over the chicken.
  3. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until chicken is fork-tender.
  4. About 30 minutes before serving, add the remaining minced garlic to the slow cooker and stir gently.
  5. Remove the chicken with tongs and set aside. Turn slow cooker to HIGH. In a small bowl, whisk cornstarch and cold water until smooth. Pour into the sauce and stir. Cook uncovered for 5-10 minutes until thickened.
  6. Shred the chicken with two forks or leave whole. Return to the slow cooker and toss to coat with the sauce.
  7. Serve over rice, noodles, or cauliflower rice. Garnish with green onions and sesame seeds.

Notes

Add half the garlic at the beginning and half near the end to prevent bitterness. Pat chicken dry to avoid watery sauce. For a thicker sauce, use a cornstarch slurry. Leftovers keep for 3-4 days in the fridge or can be frozen for up to 3 months.
