These quick creamy peanut butter banana overnight oats are the perfect grab-and-go breakfast. With just 5 minutes of prep, you’ll have a delicious, filling, and naturally sweet breakfast ready when you wake up.

Ingredients

Scale
  • 1 cup rolled oats (old-fashioned)
  • 1 cup milk (dairy, almond, oat, or coconut)
  • 1 large ripe banana
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon maple syrup or honey (optional)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Sliced banana (for topping, optional)
  • Drizzle of peanut butter (for topping, optional)
  • Chopped peanuts (for topping, optional)
  • Dark chocolate chips (for topping, optional)
  • Chia seeds or flax seeds (for topping, optional)
  • Cinnamon (for topping, optional)

Instructions

  1. Mash the ripe banana in a small bowl or directly in your jar until smooth with just a few small lumps.
  2. Add the peanut butter and vanilla extract to the mashed banana. Stir until well combined.
  3. Pour in the milk and whisk everything together until the mixture is smooth and uniform.
  4. Stir in the rolled oats and a pinch of salt. Make sure every oat is submerged in the liquid.
  5. Mix thoroughly, scraping the bottom and sides of the jar to ensure even distribution.
  6. Cover and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. In the morning, stir the oats, add a splash of milk if too thick, and top with desired toppings. Serve cold or microwave for 30-45 seconds if preferred warm.

Notes

Use ripe bananas for natural sweetness. Adjust milk based on thickness (reduce by 2 tbsp for thin milk like almond). Don’t skip the salt—it enhances flavor. Oats keep in fridge for up to 4 days. For best texture, use rolled oats, not instant or steel-cut.
