This Quick Christmas Morning Cinnamon Roll Casserole is a simple, festive breakfast made with refrigerated cinnamon rolls, heavy cream, and a touch of vanilla. It comes together in under 10 minutes of prep and bakes into a warm, gooey, and caramelized dish that tastes like you spent hours in the kitchen.

Ingredients

Scale
  • 2 (12.4-ounce) cans refrigerated cinnamon rolls with icing (such as Pillsbury Grands!)
  • 1 cup (240 ml) heavy cream
  • 1 teaspoon (5 ml) vanilla extract
  • 1 teaspoon (2.5 g) ground cinnamon
  • 2 tablespoons (25 g) packed brown sugar (light or dark)
  • ½ cup (60 g) chopped pecans (optional)
  • Pinch of salt (about ⅛ teaspoon)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Open both cans of cinnamon rolls. Set the icing packets aside. Cut each roll into quarters using a sharp knife or kitchen shears.
  3. Arrange the roll pieces in the prepared dish in a single layer, allowing some overlapping. If using pecans, sprinkle half of them and half of the brown sugar over the rolls.
  4. In a small bowl, whisk together heavy cream, vanilla extract, ground cinnamon, and a pinch of salt until fully combined.
  5. Pour the cream mixture evenly over the rolls. Do not stir. Sprinkle the remaining brown sugar and pecans on top.
  6. Bake for 25-30 minutes, until golden brown and the center is puffed and set. If the top browns too quickly, tent loosely with foil for the last 5-7 minutes.
  7. Let the casserole rest for 10 minutes. Meanwhile, warm the icing packets in a bowl of hot water for about 2 minutes.
  8. Drizzle the warm icing over the casserole in a zigzag pattern. Serve warm.

Notes

For make-ahead: Assemble the casserole the night before, cover, and refrigerate. Let sit at room temperature while the oven preheats, then bake as directed, adding 5-7 minutes if needed. For dairy-free, substitute full-fat coconut cream for heavy cream. For gluten-free, use gluten-free refrigerated cinnamon rolls.
