These Quick Buffalo Chicken Dip Stuffed Mushrooms are a weeknight staple—fast, forgiving, and packed with creamy, spicy buffalo chicken filling. Ready in under 30 minutes, they’re perfect as a main dish or appetizer.

Ingredients

Scale
  • 12 ounces cremini mushrooms (about 16–20 medium mushrooms, stems removed and reserved for another use or chopped into the filling)
  • 1 cup cooked shredded chicken (rotisserie chicken works perfectly)
  • 4 ounces cream cheese, softened
  • 1/3 cup buffalo wing sauce (preferably Frank’s RedHot)
  • 1/2 cup shredded sharp cheddar cheese, divided
  • 1/4 cup crumbled blue cheese (optional)
  • 2 tablespoons ranch dressing (or blue cheese dressing)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh chives or green onions for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or foil.
  2. Clean the mushrooms by wiping them with a damp paper towel. Gently twist the stems off and set aside. Optionally, chop the stems finely and add to the filling.
  3. Brush the mushroom caps with olive oil. Place them cavity-side up on the prepared baking sheet. Lightly sprinkle with salt and pepper.
  4. In a small mixing bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, half of the shredded cheddar (about 1/4 cup), crumbled blue cheese (if using), ranch dressing, garlic powder, and onion powder. Stir until well combined.
  5. Stuff each mushroom cap with the chicken mixture using a small spoon or your fingers. Do not pack too tightly; mound it slightly.
  6. Sprinkle the remaining shredded cheddar over the filled mushrooms.
  7. Bake for 15-18 minutes, until the mushrooms are tender and the filling is hot and bubbly. Optionally, broil for the last 1-2 minutes for a browned top.
  8. Let the mushrooms rest for 2-3 minutes before serving. Garnish with chopped chives or green onions if desired.

Notes

Don’t overfill the mushrooms; a generous but controlled mound is best. For smaller mushrooms, check at 12 minutes. Make-ahead: assemble a few hours ahead and refrigerate; add 2-3 minutes to bake time. Leftover filling can be used on crackers, in bell peppers, or stirred into pasta.
