  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional mix-ins: 1/2 cup (60g) chopped pecans or walnuts, 1/3 cup (50g) dark chocolate chips, 1/4 cup (30g) dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the wet ingredients: 1 cup pumpkin puree, 2 large eggs, 1/2 cup milk, 1/3 cup maple syrup, 2 tablespoons melted coconut oil, and 1 teaspoon vanilla extract until smooth.
  3. Add the dry ingredients to the same bowl: 2 cups rolled oats, 1 1/2 teaspoons pumpkin pie spice, 1 teaspoon cinnamon, 1 teaspoon baking powder, and 1/4 teaspoon salt. Stir with a spatula until evenly mixed. Let the batter rest for 5 minutes.
  4. Fold in optional mix-ins if using (e.g., chopped pecans, chocolate chips).
  5. Scoop the batter into the prepared muffin tin using a 1/4-cup measure or large cookie scoop. Fill each cup to the top, mounding slightly.
  6. Bake for 20-25 minutes, or until tops are golden brown and a toothpick inserted in the center comes out clean. If browning too fast, tent loosely with foil.
  7. Let cool in the tin for 10 minutes, then transfer to a cooling rack to cool completely.
