A quick and easy cocktail combining chilled apple cider and dry sparkling wine with a cinnamon-sugar rim, perfect for autumn brunches and celebrations.

Ingredients

Scale
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon water
  • 4 ounces chilled apple cider
  • 4 ounces chilled champagne or prosecco (dry brut)
  • 1 cinnamon stick (for garnish)
  • 1 thin apple slice (optional, for garnish)

Instructions

  1. In a small shallow dish, combine 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon. Stir until evenly mixed.
  2. In another small shallow dish, combine 1 tablespoon honey with 1 tablespoon warm water. Stir until honey dissolves completely.
  3. Dip the rim of a champagne flute into the honey-water mixture, rotating gently to coat the entire edge. Let excess drip off.
  4. Dip the rim into the cinnamon sugar mixture, rotating to coat evenly. Tap gently to remove loose sugar. Repeat for each glass.
  5. Ensure apple cider and sparkling wine are thoroughly chilled (at least 2 hours in the fridge).
  6. Fill each glass about halfway with 4 ounces chilled apple cider.
  7. Slowly pour 4 ounces chilled champagne or prosecco over the back of a spoon to preserve bubbles, filling almost to the top.
  8. Garnish each glass with a cinnamon stick and an optional thin apple slice. Serve immediately without stirring.

Notes

Use fresh refrigerated apple cider for best flavor. A dry brut champagne or prosecco balances the sweetness. For a non-alcoholic version, replace champagne with sparkling apple cider or sparkling water. For a vegan version, use maple syrup instead of honey. The rim can be prepped up to an hour ahead. Serve immediately for best bubbles.
