These smoky sea salt pumpkin seeds are the ultimate crowd-pleasing snack. With just 5 ingredients and about 25 minutes, you’ll have a crunchy, savory, and addictive treat that’s perfect for parties, game nights, or any gathering.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds (about 120 grams)
  • 1 teaspoon smoked paprika
  • 1 teaspoon flaky sea salt
  • 2 tablespoons olive oil (30 ml)
  • ½ teaspoon garlic powder (optional but highly recommended)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Clean the pumpkin seeds: Separate seeds from pumpkin flesh, rinse under cold water, and remove any stringy bits.
  3. Dry the seeds completely: Spread on a clean kitchen towel or paper towels, pat dry, and let air-dry for about 10 minutes.
  4. Toss with oil and seasonings: In a medium bowl, combine dried seeds, olive oil, smoked paprika, garlic powder (if using), and half the flaky sea salt. Stir until evenly coated.
  5. Spread on a baking sheet: Pour seeds onto a parchment-lined baking sheet in a single, even layer.
  6. Roast for 15 minutes: Place on the middle rack of the oven.
  7. Stir and rotate: Remove the sheet, stir seeds, and rotate the pan front to back.
  8. Roast for another 5-10 minutes: Continue roasting until seeds are golden brown and smell deeply toasty. Total time is usually 20-25 minutes.
  9. Season immediately: Sprinkle remaining flaky sea salt over hot seeds. Let cool completely on the baking sheet.
  10. Break apart and serve: Once cooled, break apart any clusters. Seeds should be crunchy, smoky, and perfectly salted.

Notes

Don’t skip drying the seeds thoroughly—wet seeds will steam instead of roast, resulting in a chewy texture. Watch the seeds closely during the last few minutes of roasting as they can burn quickly. Let them cool completely for maximum crunch. For best results, use Spanish smoked paprika (pimentón) and flaky sea salt like Maldon.
