Ingredients

Scale
  • 2 ¾ cups all-purpose flour, spooned and leveled
  • ½ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cut into small cubes
  • ½ cup pumpkin puree (100% pure, not pie filling)
  • ⅓ cup cold buttermilk
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 ½ cups powdered sugar, sifted
  • 3 tablespoons pure maple syrup
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 12 tablespoons milk or heavy cream

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Cut butter into small cubes and refrigerate.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  3. Add cold butter cubes to flour mixture. Cut in with a pastry cutter or two forks until mixture resembles coarse meal with pea-sized butter pieces.
  4. In a small bowl, whisk together pumpkin puree, buttermilk, vanilla extract, and egg until smooth.
  5. Make a well in the dry ingredients. Pour in wet mixture and stir with a fork until just combined. Dough should be shaggy with some dry spots.
  6. Turn dough onto a lightly floured surface. Gently pat into a ¾-inch thick rectangle. Do not knead.
  7. Cut rectangle into 8 triangles using a bench scraper or sharp knife. Place on prepared baking sheet, spacing 2 inches apart.
  8. Freeze the baking sheet with scones for at least 15 minutes.
  9. Brush tops of frozen scones with heavy cream or milk. Bake at 400°F (200°C) for 16-18 minutes until golden brown and toothpick inserted in center comes out clean.
  10. Cool on baking sheet for 5 minutes, then transfer to a cooling rack.
  11. While scones cool, make glaze: whisk together sifted powdered sugar, maple syrup, cinnamon, and nutmeg. Add milk or cream 1 tablespoon at a time until thick but pourable.
  12. Wait until scones are completely cool, then drizzle glaze over tops. Let set for 10-15 minutes before serving.

Notes

Keep all ingredients cold for flaky scones. Freeze shaped scones before baking for best rise. Let scones cool completely before glazing to prevent glaze from melting. Use real maple syrup for best flavor.
