  • 2 cups apple cider (unfiltered)
  • 2 medium firm apples (Honeycrisp, Granny Smith, or Braeburn), cored and cut into ½-inch wedges
  • 1 large yellow onion, sliced into thin half-moons
  • 2 tablespoons unsalted butter
  • 45 sprigs fresh thyme (or 1 teaspoon dried)
  • ½ cup low-sodium chicken broth
  • 1 tablespoon Dijon mustard
  • Salt and black pepper to taste
  • Optional: fresh parsley, chopped, and whole-grain mustard for garnish

Instructions

  1. Prep your ingredients: Slice the onion into thin half-moons. Core the apples and cut them into ½-inch thick wedges (no need to peel). Pick thyme leaves or leave sprigs whole. Measure cider and broth.
  2. Brown the bratwurst: Heat a large cast iron skillet over medium heat and add 1 tablespoon butter. Once sizzling, add bratwurst in a single layer. Brown on all sides, turning every 2-3 minutes with tongs, until deep golden brown (about 8-10 minutes). Transfer to a plate.
  3. Sauté the onions: Add remaining 1 tablespoon butter to the skillet. Add sliced onions and a pinch of salt. Cook, stirring occasionally, until soft and golden (5-7 minutes). Scrape up any browned bits from the pan.
  4. Deglaze and build braising liquid: Pour in apple cider and chicken broth, stirring to combine. Bring to a gentle simmer. Add thyme sprigs. Let bubble for 1-2 minutes.
  5. Add apples and brats: Nestle apple wedges into the liquid around the edges of the skillet. Return browned bratwurst to the pan, placing on top of onions and apples. Liquid should come about halfway up the brats; add more cider or broth if needed.
  6. Braise: Reduce heat to low, cover the skillet, and let braise gently for 15 minutes. Uncover, turn brats, and continue cooking uncovered for 5-10 minutes until liquid reduces by half and becomes glossy and syrupy. Apples should be tender but not mushy; brats should reach 160°F internally.
  7. Finish and serve: Remove thyme sprigs. Stir in Dijon mustard until fully incorporated. Taste and adjust salt and pepper. Serve brats and apples with cider glaze spooned over the top. Garnish with fresh parsley and whole-grain mustard if desired.

Don’t skip browning the brats—it builds flavor. Use tongs to avoid piercing the sausages. Keep heat low for braising to prevent burning. Taste sauce and adjust sweetness with extra mustard or a pinch of brown sugar if needed. Leftovers keep up to 4 days and taste even better the next day.
