  • 1 ½ cups old-fashioned rolled oats (not quick oats)
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • ¾ cup unsalted butter, cold and cut into small cubes
  • 4 medium apples (about 600g), peeled and diced into ½-inch pieces (Honeycrisp or Granny Smith)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup unsalted butter
  • ½ cup packed light brown sugar
  • ¼ cup heavy cream
  • 2 tablespoons white miso paste (Hikari or Miso Master recommended)
  • 1 teaspoon vanilla extract
  • Pinch of flaky sea salt (for finishing)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides.
  2. In a large bowl, whisk together flour, oats, brown sugar, granulated sugar, cinnamon, and salt. Add cold cubed butter and work into dry ingredients using a pastry cutter or fingertips until mixture resembles coarse meal with some pea-sized butter pieces. Press about two-thirds of the mixture firmly into the bottom of the prepared pan. Set remaining crumble aside.
  3. In a medium bowl, toss diced apples with flour, sugar, lemon juice, cinnamon, and nutmeg until evenly coated. Spread apple mixture evenly over the pressed crust.
  4. In a small saucepan over medium heat, melt butter. Add brown sugar and whisk until smooth and bubbly, about 2 minutes. Slowly pour in heavy cream while whisking constantly. Remove from heat and whisk in white miso paste until completely smooth. Stir in vanilla extract.
  5. Pour miso caramel evenly over the apples. Sprinkle reserved crumble mixture over the top in an even layer.
  6. Bake for 35 to 40 minutes, until top is golden brown and filling is bubbly around the edges. Cool in pan on a wire rack for at least 30 minutes before lifting out using parchment overhang.
  7. Transfer to a cutting board and slice into squares. Sprinkle with flaky sea salt just before serving.

Notes

Let bars cool completely before slicing to prevent layers from sliding apart. For best flavor, make a day ahead. Add flaky salt just before serving. For gluten-free, use 1:1 gluten-free flour blend and certified gluten-free oats. For vegan, substitute butter with coconut oil or vegan butter and heavy cream with full-fat coconut cream.
