These maple-roasted delicata squash rings are a quick and easy side dish that’s perfect for dinner parties, holiday tables, or weeknight dinners. With just five simple ingredients and 30 minutes, you’ll get caramelized, tender rings that are sure to impress.

Ingredients

Scale
  • 2 medium delicata squash (about 1.5 pounds total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon fresh thyme or rosemary, chopped (optional garnish)
  • Flaky sea salt, for finishing (optional garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. Wash the squash thoroughly and pat dry.
  3. Trim about ¼ inch off both ends of each squash.
  4. Slice the squash crosswise into ½-inch thick rings.
  5. Use a small spoon or your fingers to scoop out the seeds and stringy pulp from each ring.
  6. In a small bowl, whisk together maple syrup, olive oil, kosher salt, and black pepper.
  7. Place the rings in a large bowl, pour the maple mixture over them, and toss gently to coat evenly. Alternatively, arrange rings on the baking sheet and brush the mixture onto both sides.
  8. Arrange the rings in a single layer on the prepared baking sheet with space between each ring.
  9. Roast for 10 minutes.
  10. Flip the rings using tongs.
  11. Roast for another 8-10 minutes, until edges are caramelized and rings are tender when pierced with a fork. If using fresh herbs, sprinkle them on during the last 5 minutes.
  12. Let the rings rest on the baking sheet for 2 minutes. Transfer to a serving platter and sprinkle with flaky sea salt if desired.

Notes

Don’t overcrowd the pan; use two baking sheets if needed. Cut rings evenly (½ inch thick) for consistent cooking. Use room temperature maple syrup for even coating. Watch the last few minutes closely to prevent burning. Let the rings rest for 2-3 minutes before serving to set the caramelized coating. The flavors deepen after a day in the fridge.
