  • 1 large egg, beaten with 1 tablespoon water

  • 2 tablespoons unsalted butter (for cheese sauce)
  • 2 tablespoons all-purpose flour (for cheese sauce)
  • ¾ cup German beer (lager or pilsner)
  • ½ cup whole milk
  • 2 cups sharp cheddar cheese, freshly grated
  • ½ teaspoon mustard powder
  • ¼ teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water, brown sugar, and yeast. Stir and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined, then gradually add remaining 2 cups of flour, ½ cup at a time, until a shaggy dough forms. Knead for 6-8 minutes (8-10 by hand) until smooth and elastic.
  3. First rise: Shape dough into a ball, place in a lightly greased bowl, cover, and let rise in a warm spot for 45-60 minutes until doubled in size.
  4. Shape the bites: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Punch down dough, divide into 4 pieces, roll each into a 1-inch thick rope, and cut into 1-inch pieces (about 50-60 total).
  5. Baking soda bath: In a large pot, bring 8 cups of water to a boil. Add ⅓ cup baking soda (it will bubble). Reduce to a gentle simmer. Working in batches, boil pretzel bites for 20-25 seconds, flipping halfway. Transfer to prepared baking sheet, spacing 1 inch apart.
  6. Egg wash and bake: Brush each bite with egg wash and sprinkle with flaky sea salt. Bake for 12-15 minutes, rotating halfway, until deep golden brown.
  7. Make the beer cheese sauce: In a small saucepan, melt 2 tablespoons butter over medium heat. Whisk in 2 tablespoons flour and cook for 1-2 minutes. Slowly whisk in beer and milk until smooth. Simmer for 2-3 minutes until thickened. Reduce heat to low, add cheddar cheese a handful at a time, stirring until melted. Stir in mustard powder, garlic powder, cayenne (if using), and season with salt and pepper. Keep warm.
  8. Finish and serve: Brush baked pretzel bites with melted butter. Serve immediately with warm beer cheese sauce.

Notes

Don’t skip the baking soda bath—it creates the classic pretzel crust. Grate your own cheese for a smooth sauce. Water temperature for yeast should be 110°F–115°F. For make-ahead, freeze shaped bites before boiling; boil from frozen adding 10 seconds to bath time.
