Perfect Easy Cozy Sweet Potato Casserole with Marshmallows

This cozy marshmallow sweet potato casserole features creamy, buttery sweet potatoes topped with perfectly toasted marshmallows. It’s a quick and easy side dish that’s perfect for holidays or any time you need a little comfort.

  • 4 pounds sweet potatoes (about 45 large)
  • 1/2 cup unsalted butter (1 stick, softened)
  • 1/2 cup brown sugar (packed)
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 1/4 cup milk (whole milk preferred)
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (freshly grated if possible)
  • 3 cups large marshmallows (about 30)
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Peel and cube the sweet potatoes into 1-inch cubes. You should have about 8-9 cups.
  3. Place the cubes in a large pot and cover with cold water by about 2 inches. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes, until fork-tender. Drain well and let sit for a minute to steam dry.
  4. Transfer the drained sweet potatoes to a large mixing bowl. Add the softened butter, packed brown sugar, eggs, vanilla extract, milk, salt, cinnamon, and nutmeg. Using a hand mixer on medium speed, beat until smooth and fluffy, about 2-3 minutes. Scrape down the sides of the bowl halfway through.
  5. Spread the sweet potato mixture evenly in the prepared baking dish. Smooth the top with a spatula.
  6. Arrange the large marshmallows in rows on top of the sweet potato mixture. Sprinkle the mini marshmallows around and between the large ones. If using pecans, sprinkle them over the marshmallows now.
  7. Bake for 20-25 minutes, until the marshmallows are puffed up and golden brown. Keep an eye on them during the last 5 minutes. If browning too quickly, tent loosely with foil.
  8. Remove from the oven and let rest for 5-10 minutes before serving.

Notes

For extra toasted marshmallows, broil for the last 1-2 minutes, watching carefully. The casserole can be prepared up to 2 days in advance (without marshmallows) and refrigerated. Add marshmallows and bake just before serving, adding 5-10 minutes to baking time if starting from cold.
