A stunning, easy-to-make appetizer featuring warm, gooey brie wrapped in flaky puff pastry with tart cranberry sauce. Perfect for holiday parties, game nights, or any gathering where you want to impress without spending hours in the kitchen.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 1 wheel (8 ounces) brie cheese
  • 1/3 cup whole berry cranberry sauce
  • 2 tablespoons chopped pecans or walnuts (optional)
  • 1 large egg, beaten with 1 tablespoon water (egg wash)
  • Fresh rosemary or thyme sprigs for garnish (optional)
  • Crackers, sliced baguette, or apple slices for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, gently roll out the thawed puff pastry sheet to about 12 inches square.
  3. Place the brie wheel in the center of the pastry.
  4. Spoon the cranberry sauce over the top of the brie, spreading gently and leaving a half-inch border. If using nuts, sprinkle them over the cranberry sauce.
  5. Fold the pastry: bring one corner up and over the brie, then the opposite corner, then the remaining two corners. Pinch the seams together firmly to seal.
  6. Carefully flip the wrapped brie over so the seams are on the bottom. Gently press the pastry against the cheese.
  7. Brush the entire surface with the beaten egg mixture.
  8. Using a sharp knife, cut a few small slits in the top of the pastry to allow steam to escape.
  9. Bake for 30-35 minutes, until the pastry is deep golden brown and puffed up.
  10. Remove from the oven and let it rest for 5-10 minutes before serving.
  11. Transfer to a serving board or plate. Garnish with fresh rosemary or thyme sprigs if desired. Surround with crackers, baguette slices, or apple slices. Serve warm.

Notes

Keep everything cold for best puff. Let brie come to room temperature for 30 minutes before assembling for even melting. Drain excess liquid from cranberry sauce to prevent soggy pastry. Seal seams tightly to prevent cheese leaks. For make-ahead, assemble up to 24 hours in advance, refrigerate, and add 5-10 minutes to baking time.
