These bacon wrapped smokies with brown sugar glaze are sweet, salty, smoky, and impossibly addictive. They are incredibly easy to make with just three main ingredients and are perfect for any gathering.

  • 14 oz little smokies (e.g., Hillshire Farm)
  • 1 lb thin-cut bacon
  • 1/2 cup packed brown sugar (light or dark)
  • 1/4 to 1/2 teaspoon chili powder or cayenne pepper (optional)
  • Toothpicks (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  2. Pat the little smokies dry with a paper towel to remove excess moisture.
  3. Cut each bacon slice in half crosswise to create pieces about 3-4 inches long.
  4. Wrap each little smokie with a half-slice of bacon, starting at one end and wrapping snugly with slight overlap. Place seam-side down on the wire rack.
  5. In a small bowl, mix the brown sugar with any optional spices (chili powder or cayenne). Sprinkle about 1/2 teaspoon of the brown sugar mixture over each wrapped smokie.
  6. Bake for 30-35 minutes, or until the bacon is crispy and the brown sugar has caramelized into a glossy glaze. Rotate the pan halfway through for even cooking.
  7. Let them rest on the wire rack for 5 minutes before serving to allow the glaze to set.
  8. Transfer to a serving platter and serve warm.

Notes

For extra crispy bacon, broil for the last 1-2 minutes but watch carefully to prevent burning. Patting the smokies dry is crucial for the glaze to stick. If you don’t have a wire rack, you can crumple aluminum foil into a makeshift rack or bake directly on the pan and flip halfway through.
