This crockpot honey garlic chicken breast recipe is the kind of weeknight dinner that makes you look like you tried harder than you actually did. It’s simple, reliable, and never dry.

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 1/3 cup honey
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons ketchup
  • 45 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Salt and black pepper to taste
  • Sesame seeds and sliced green onions for garnish (optional)

Instructions

  1. Season the chicken breasts. Pat the chicken dry with paper towels. Season both sides generously with salt and black pepper.
  2. Make the honey garlic sauce. In a small mixing bowl, whisk together the honey, low-sodium soy sauce, ketchup, minced garlic, dried oregano, and red pepper flakes (if using). Taste and adjust sweetness or saltiness as needed.
  3. Layer the chicken in the crockpot. Place the seasoned chicken breasts in the bottom of your slow cooker in a single layer. Pour the honey garlic sauce over the chicken, making sure each piece is coated.
  4. Cook on low for 2.5 to 3 hours. Do not cook on high. Set a timer for 2.5 hours and check the internal temperature with a meat thermometer. You’re looking for 160°F to 165°F in the thickest part.
  5. Flip the chicken halfway through. About 1.5 hours in, use tongs to flip each chicken breast over for even cooking.
  6. Remove the chicken and keep warm. Once the chicken hits 160°F, transfer it to a cutting board or plate. Tent it loosely with foil to keep it warm.
  7. Thicken the sauce. In a small bowl, whisk together the cornstarch and cold water until smooth. Pour the slurry into the crockpot with the remaining sauce. Stir well. Turn the crockpot to high and let it cook for 10-15 minutes, stirring occasionally, until the sauce thickens to a syrupy consistency.
  8. Slice or shred the chicken. Slice the chicken against the grain into thick strips, or shred it with two forks.
  9. Return the chicken to the sauce. Add the sliced or shredded chicken back into the thickened sauce. Stir gently to coat every piece. Let it sit for 2-3 minutes so the sauce soaks in.
  10. Garnish and serve. Sprinkle with sesame seeds and sliced green onions if desired. Serve immediately over rice, noodles, or your favorite side.

Notes

The number one mistake is cooking too long. Set a timer for 2.5 hours and check the internal temperature. Use a meat thermometer for best results. Don’t skip the cornstarch slurry—it thickens the sauce to a glossy, clingy consistency.
