Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs (about 2 pounds or 900g)
  • 1 tablespoon olive oil (15ml)
  • Salt and freshly ground black pepper
  • 1/3 cup honey (about 110g)
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce (60ml)
  • 2 tablespoons rice vinegar (30ml)
  • 1 tablespoon sriracha or chili garlic sauce (15ml), optional
  • 1 tablespoon unsalted butter (14g)
  • 2 green onions, thinly sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Fresh cilantro or parsley (for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper. Let them sit at room temperature for about 10 minutes.
  2. In a small bowl, whisk together the honey, minced garlic, soy sauce, rice vinegar, and sriracha (if using). Set aside.
  3. Place a large, heavy-bottomed skillet over medium-high heat and add the olive oil. Wait until the oil is shimmering, almost smoking.
  4. Place the chicken thighs skin-side down in the hot pan. Cook undisturbed for 6-7 minutes until deep golden brown. Flip and cook the other side for 4 minutes.
  5. Reduce the heat to medium-low and carefully pour the honey garlic sauce around the chicken (not directly on top). Let it come to a gentle simmer.
  6. Cook for 8-10 minutes, spooning the sauce over the chicken every couple of minutes, until the sauce thickens and becomes glossy.
  7. Check for doneness: the chicken is ready when it reaches 165°F (74°C) at the thickest part, or juices run clear and meat pulls away from the bone easily.
  8. Remove the pan from heat and swirl in the tablespoon of butter. Stir gently until melted.
  9. Let the chicken rest in the pan for 5 minutes. Sprinkle with sliced green onions and sesame seeds before serving.

Notes

Pat chicken dry for crispy skin. Don’t flip too early to prevent sticking. Keep heat at medium-low after adding sauce to prevent burning. For a crowd, double the recipe and work in batches. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
