These lighter deviled eggs use Greek yogurt and avocado instead of heavy mayo, with a spicy kick from Sriracha. Perfect for Halloween parties or a healthy snack.

  • 12 large eggs (room temperature)
  • 1/4 cup plain Greek yogurt (full-fat recommended)
  • 1/4 cup mashed avocado (about half a ripe avocado)
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika (plus extra for garnish)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 teaspoon apple cider vinegar
  • Optional garnishes: extra Sriracha drizzle, paprika dusting, fresh chives, or black sesame seeds

Instructions

  1. Boil the eggs: Place eggs in a single layer in a saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat, then immediately cover and remove from heat. Let sit for exactly 10 minutes.
  2. Shock the eggs: Transfer eggs to a large bowl filled with ice water using a slotted spoon. Let them chill for at least 5 minutes.
  3. Peel carefully: Gently tap each egg on the counter to crack the shell, then roll it between your palms to loosen. Start peeling from the wider end. Rinse off any tiny shell bits under cool water.
  4. Halve the eggs: Using a sharp knife, slice each egg lengthwise. Gently pop out the yolks into a small mixing bowl. Arrange the whites on a serving platter, cut-side up.
  5. Make the filling: Mash the yolks with a fork until crumbly. Add the Greek yogurt, mashed avocado, Sriracha, Dijon mustard, smoked paprika, garlic powder, salt, pepper, and apple cider vinegar. Mix until smooth and creamy. Taste and adjust seasoning.
  6. Pipe the filling: Spoon the mixture into a piping bag or zip-top bag. Snip the corner (about 1/2 inch wide). Pipe a generous swirl into each egg white half.
  7. Garnish and serve: Sprinkle with extra smoked paprika, drizzle a tiny bit of Sriracha on top, or add fresh chives. For a Halloween twist, use black sesame seeds to make little ‘spider’ shapes. Serve immediately or refrigerate until ready.

Notes

For perfect hard-boiled eggs, use older eggs (buy a week ahead) and don’t skip the ice bath. If filling is too runny, add more Greek yogurt or avocado; if too thick, add a splash of apple cider vinegar or water. Make ahead: boil and peel eggs up to 2 days ahead; fill and pipe day of serving. To prevent avocado browning, mix in a teaspoon of lime or lemon juice.
