  • ½ cup (60g) whole wheat flour
  • 1 packet (2 ¼ teaspoons) instant yeast
  • ¾ cup (180ml) warm water (110°F)
  • 1 tablespoon (21g) honey
  • 2 tablespoons (28g) unsalted butter, melted
  • 1 teaspoon (6g) salt
  • ¼ cup (60g) baking soda
  • Coarse sea salt, for topping
  • 1 egg, beaten with 1 tablespoon water (egg wash)
  • 4 oz (113g) reduced-fat cream cheese, softened
  • 1 cup (112g) sharp cheddar cheese, freshly shredded
  • ½ cup (120ml) light beer (lager or pilsner)
  • 1 teaspoon (5g) Dijon mustard
  • ½ teaspoon (3ml) Worcestershire sauce
  • ¼ teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Activate the yeast: In your mixing bowl, combine the warm water (110°F) and honey. Sprinkle the yeast on top and let it sit for 5 minutes until foamy.
  2. Make the dough: Add the all-purpose flour, whole wheat flour, and salt to the yeast mixture. Pour in the melted butter. Knead with a dough hook on medium speed for 5 minutes (or by hand for 7-8 minutes) until smooth and slightly tacky.
  3. First rise: Shape the dough into a ball and place in a lightly oiled bowl. Cover with a towel and let rise in a warm spot for 20 minutes until puffed.
  4. Preheat and prepare: Preheat oven to 425°F (220°C). Line a baking sheet with parchment. Fill a large pot with 6 cups water and add ¼ cup baking soda. Bring to a rolling boil.
  5. Shape the bites: Turn dough onto a floured surface. Divide into 4 pieces. Roll each into a 12-inch rope, ½ inch thick. Cut into 1-inch pieces (about 48-56 total).
  6. Boil the bites: Drop bites into boiling water in batches. Boil for 30 seconds, then transfer to the baking sheet with a slotted spoon.
  7. Egg wash and salt: Brush each bite with egg wash. Sprinkle generously with coarse sea salt.
  8. Bake: Bake for 12-14 minutes until deep golden brown, rotating the pan halfway through.
  9. Make the beer cheese dip: In a small saucepan over low heat, combine cream cheese and cheddar. Stir until melted (3-4 minutes). Slowly whisk in beer, then add Dijon, Worcestershire, garlic powder, salt, and pepper. Whisk until smooth and heated through (about 2 more minutes).
  10. Serve immediately: Transfer warm pretzel bites to a platter with the dip. Best eaten within 15 minutes.

Notes

Don’t skip the boiling step—it creates the pretzel crust. Shred your own cheese for a smooth dip. Water for yeast should be 105-115°F. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use plant-based butter, maple syrup, and vegan cheeses.
