Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (Honeycrisp or Granny Smith recommended)
  • 2 tablespoons lemon juice
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1/2 cup granulated sugar
  • 2 tablespoons water
  • 1/4 cup milk (any kind)
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1/2 teaspoon flaky sea salt
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1/2 cup whole wheat pastry flour
  • 1/3 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 tablespoons unsalted butter, melted and slightly cooled
  • 2 tablespoons plain Greek yogurt

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the middle of the oven.
  2. In a large mixing bowl, toss the sliced apples with lemon juice, maple syrup, vanilla, cinnamon, nutmeg, and a pinch of salt. Let sit while you make the caramel.
  3. In a medium saucepan, combine sugar and water. Stir gently to moisten the sugar, then place over medium heat. Cook without stirring until deep amber, about 6 to 8 minutes. Swirl the pan occasionally if needed.
  4. Remove from heat and carefully whisk in the milk. It will bubble up. Whisk until smooth, then add butter pieces and flaky salt. Stir until butter is melted. Whisk in vanilla. Set aside to cool slightly.
  5. In a medium bowl, combine oats, flour, brown sugar, cinnamon, and salt. Add melted butter and Greek yogurt, stir with a fork until clumps form. Do not overmix.
  6. Pour the apple mixture (including juices) into a 9×9-inch baking dish and spread evenly. Drizzle about half of the salted caramel over the apples. Sprinkle the oat crumble evenly on top.
  7. Bake for 30 to 35 minutes, until filling is bubbly and topping is golden brown. If topping browns too quickly, tent loosely with foil for the last 10 minutes.
  8. Let cool for at least 10 minutes before serving. Drizzle remaining caramel over each serving and add an extra pinch of flaky salt if desired.

Notes

Don’t stir the caramel while it’s cooking to prevent crystallization. Use a mix of apple varieties for best flavor. Let the crisp rest for 10 minutes before serving to allow the filling to set. For a gluten-free version, use gluten-free all-purpose flour and certified gluten-free oats. For a vegan adaptation, use plant-based butter, coconut yogurt, and plant-based milk.
