A lighter twist on the classic turkey melt, featuring a tangy yogurt-based spread, lean turkey, and tart cranberry sauce on hearty bread, all baked to golden, bubbly perfection.

Ingredients

Scale
  • 2 slices hearty whole-grain or sourdough bread
  • 4–6 ounces cooked turkey, sliced or shredded
  • 1/4 cup cranberry sauce (whole berry or jelled)
  • 2 slices reduced-fat Swiss, provolone, or mozzarella cheese
  • 3 tablespoons plain Greek yogurt (2% or full fat)
  • 1 teaspoon Dijon mustard
  • 1 pinch salt
  • 1 squeeze lemon juice
  • 1 handful arugula or spinach
  • Optional: thinly sliced apple or pear, drizzle of honey, red pepper flakes

Instructions

  1. Preheat your oven or toaster oven to 400°F (200°C). If using a broiler, set it to high and position the rack about 6 inches from the heat source.
  2. Make the yogurt spread: In a small bowl, combine 3 tablespoons plain Greek yogurt, 1 teaspoon Dijon mustard, a pinch of salt, and a squeeze of lemon juice. Stir until smooth. Taste and adjust.
  3. Prepare the bread: Place your two slices of bread on a lined baking sheet. Toast them lightly in the oven for about 2-3 minutes, just until they start to firm up.
  4. Spread the yogurt mixture: Remove the bread from the oven. Spread the yogurt mixture evenly over each slice, going all the way to the edges.
  5. Layer the turkey: Divide the turkey evenly between the two slices. Pile it on generously.
  6. Add the cranberry sauce: Spoon the cranberry sauce over the turkey. Spread it gently with the back of a spoon, leaving a little space around the edges.
  7. Top with cheese: Lay the cheese slices over the cranberry and turkey. Make sure the cheese covers most of the surface.
  8. Bake until bubbly: Place the baking sheet back in the oven. Bake for 8-10 minutes, or until the cheese is melted and bubbly and the edges of the bread are golden brown. If using a broiler, it will take about 3-4 minutes—watch it closely.
  9. Add the greens: Remove from the oven. Immediately top each melt with a handful of fresh arugula or spinach.
  10. Serve immediately: Transfer the melts to a plate. Cut each slice in half diagonally for a pretty presentation.

Notes

Pre-toasting the bread is essential to prevent sogginess. Use room temperature ingredients for even cooking. Don’t overload with cranberry sauce to keep the sandwich intact. For best results, serve immediately.
