A quick and easy one-pot lasagna soup that delivers all the comfort of traditional lasagna without the heavy aftermath. Made with lean ground turkey, broken lasagna noodles, and creamy ricotta, this soup comes together in under 40 minutes and is perfect for busy weeknights.

  • 1 lb lean ground turkey (93/7) or lean ground beef (90/10)
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes (preferably San Marzano)
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 8 oz lasagna noodles, broken into bite-sized pieces
  • 1 cup part-skim ricotta cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • A few fresh basil leaves, torn (for garnish)
  • ¼ cup grated Parmesan cheese (for serving)

Instructions

  1. Brown the turkey: Heat a large pot or Dutch oven over medium-high heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned (about 5-7 minutes). Do not drain; the browned bits add flavor.
  2. Sauté the aromatics: Reduce heat to medium. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic, oregano, basil, and red pepper flakes, and cook for another minute until fragrant.
  3. Build the broth: Pour in the crushed tomatoes and chicken broth. Stir well, scraping up any browned bits from the bottom. Season with salt and pepper. Bring to a boil, then reduce to a simmer.
  4. Cook the pasta: Add the broken lasagna noodles to the pot. Stir gently to prevent clumping. Simmer for 10-12 minutes, stirring occasionally, until the pasta is tender but still al dente. If the soup gets too thick, add a splash of broth or water.
  5. Finish with ricotta: Remove the pot from heat. Drop spoonfuls of ricotta on top of the soup—do not stir it in. Let it sit for a minute to warm through, creating creamy pockets.
  6. Serve and garnish: Ladle the soup into bowls, ensuring each gets a dollop of ricotta. Top with fresh parsley, torn basil, and a generous sprinkle of Parmesan. Serve hot.

Notes

For meal prep, undercook the pasta slightly as it will continue to soften when reheated. The soup thickens as it sits, so add a splash of broth when reheating. Do not stir the ricotta into the soup; dollop it on top at the end for the best texture.
