A lighter take on classic herb roasted turkey that uses less butter but delivers incredible flavor from fresh garlic and sage. Perfect for holidays or any day, this recipe yields juicy meat and crispy skin without the heavy, greasy feeling.

Ingredients

Scale
  • 1 whole turkey (10–12 pounds), thawed if frozen
  • 4 tablespoons unsalted butter, softened
  • 6 cloves garlic, minced
  • 2 tablespoons fresh sage, finely chopped (or 1 tablespoon dried sage)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 teaspoon salt, plus more for seasoning the cavity
  • 1/2 teaspoon black pepper, freshly ground
  • 1 lemon, halved
  • 1 onion, quartered
  • 2 cups low-sodium chicken broth

Instructions

  1. Preheat your oven to 325°F (163°C). Make sure the rack is on the lowest position so the turkey fits comfortably in the oven.
  2. Prepare the herb butter. In a small bowl, combine the softened butter, minced garlic, chopped sage, thyme, salt, and pepper. Mix until everything is well incorporated. Set it aside at room temperature so it stays spreadable.
  3. Prepare the turkey. Remove the turkey from its packaging and take out the giblets and neck. Pat the turkey completely dry with paper towels. This is important, dry skin equals crispy skin. Let the turkey sit at room temperature for about 30 minutes to take the chill off.
  4. Season the cavity. Sprinkle the inside of the turkey with a little salt and pepper. Stuff the cavity with the lemon halves and onion quarters. Don’t overstuff it, you want air to circulate.
  5. Apply the herb butter. Using your fingers, gently loosen the skin from the breast meat. Be careful not to tear the skin. Slide about two-thirds of the herb butter mixture under the skin, spreading it evenly over the breast meat. Rub the remaining butter all over the outside of the turkey, including the legs and wings.
  6. Truss the turkey (optional). Tie the legs together with kitchen twine and tuck the wing tips under the body. This helps the turkey cook evenly and looks nice when it’s done.
  7. Place the turkey in the roasting pan. Set it breast-side up on the rack in the roasting pan. Pour the chicken broth into the bottom of the pan, being careful not to wash the herb butter off the turkey.
  8. Roast the turkey. Place the turkey in the preheated oven. Roast for about 13-15 minutes per pound, so a 12-pound turkey will take about 2.5 to 3 hours. Baste the turkey with the pan juices every 45 minutes. If the skin is browning too quickly, tent the turkey loosely with aluminum foil.
  9. Check for doneness. The turkey is done when an instant-read thermometer inserted into the thickest part of the thigh (without touching bone) reads 165°F (74°C). The breast should read about 160°F (71°C) since it will continue to cook as it rests.
  10. Rest the turkey. Once the turkey is done, remove it from the oven and let it rest on a cutting board for at least 20-30 minutes. Don’t skip this step, it allows the juices to redistribute and keeps the meat tender.
  11. Carve and serve. Carve the turkey and serve with the pan juices or a lighter gravy made from the drippings.

Notes

For maximum crispiness, ensure the turkey skin is thoroughly dried before applying the herb butter. Letting the turkey come to room temperature before roasting ensures even cooking. Resting the turkey for 20-30 minutes after roasting is essential for juicy meat. If the skin browns too quickly, tent with foil. Add a teaspoon of baking powder to the herb butter for extra crispy skin.
