These lighter Halloween jello shot cauldrons are fun, festive, and won’t derail your whole week. Made with real fruit juice and sugar-free gelatin, they’re a guilt-free party treat that tastes amazing.

Ingredients

Scale
  • 1 cup 100% white grape juice
  • 1/2 cup water
  • 2 tablespoons unflavored gelatin powder (about 2 packets)
  • 1/4 cup sugar-free green gelatin mix (lime flavor)
  • 1/2 cup vodka
  • 1/4 cup fresh lime juice (about 2 limes)
  • 12 mini plastic cauldrons
  • Non-stick cooking spray
  • Green sanding sugar or edible glitter (optional)
  • Gummy worms or candy eyeballs (for topping)

Instructions

  1. Lightly spray the inside of each mini cauldron with non-stick cooking spray. Use a paper towel to wipe away any excess. Set them on a baking sheet or tray.
  2. Pour 1/2 cup of cold water into a small bowl. Sprinkle the 2 tablespoons of unflavored gelatin powder evenly over the surface. Let it sit for 5-10 minutes until it looks like a firm, wobbly sheet.
  3. In a medium saucepan, pour the 1 cup of white grape juice. Heat over medium heat until steaming but not boiling, about 3-4 minutes. Remove from heat immediately.
  4. Add the bloomed gelatin to the warm juice. Whisk gently until completely dissolved.
  5. Sprinkle the sugar-free lime gelatin powder into the warm juice mixture. Whisk until fully dissolved.
  6. Let the mixture sit at room temperature for 10-15 minutes, stirring occasionally, until it cools to room temperature.
  7. Pour in the 1/2 cup vodka and 1/4 cup fresh lime juice. Whisk gently to combine.
  8. Carefully pour the mixture into each prepared cauldron, filling them about 3/4 full. A piping bag makes this easier, but a small spoon works too.
  9. Place the tray of cauldrons in the refrigerator. Let them set for at least 4 hours, but overnight is better.
  10. Once the jello is fully set, top each cauldron with a gummy worm or candy eyeball. Sprinkle with green sanding sugar or edible glitter if desired. Serve cold.

Notes

Temperature control is key: don’t boil the juice, and cool the mixture before adding alcohol. Bloom the gelatin properly for a silky texture. Make ahead for best flavor.
