These lighter cranberry bliss bars with white chocolate drizzle are quick, easy, and made with simple ingredients like Greek yogurt for a tender, tangy texture. Perfect for any occasion, they’re a crowd-pleasing dessert that feels indulgent but is lighter than the classic version.

Ingredients

Scale
  • 1 ½ cups (180g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • 4 tablespoons (56g) unsalted butter, melted and slightly cooled
  • ½ cup (120g) plain Greek yogurt (full-fat or 2%)
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (140g) dried cranberries
  • 1 tablespoon orange zest (from about 1 medium orange, optional)
  • ½ cup (90g) white chocolate chips
  • 1 teaspoon coconut oil (optional, for thinning the drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Lightly spray the parchment with non-stick spray.
  2. In a medium bowl, whisk together 1 ½ cups all-purpose flour, ½ teaspoon baking powder, and ¼ teaspoon salt for about 15 seconds. Set aside.
  3. In another medium bowl, whisk together ¾ cup granulated sugar, 4 tablespoons melted unsalted butter (cooled slightly), ½ cup plain Greek yogurt, 1 large egg, and 1 teaspoon vanilla extract until smooth and well combined.
  4. Pour the wet ingredients into the dry ingredients. Fold gently with a rubber spatula until just combined. A few streaks of flour are okay.
  5. Fold in 1 cup dried cranberries and 1 tablespoon orange zest (if using) until evenly distributed.
  6. Transfer the batter to the prepared pan. Use a spatula to spread it evenly into the corners. Wet the spatula slightly with water to help smooth the top.
  7. Bake for 28-32 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Let the bars cool in the pan on a wire rack for 15 minutes. Then use the parchment handles to lift them out and transfer to the rack to cool completely.
  9. Make the white chocolate drizzle: Place ½ cup white chocolate chips and 1 teaspoon coconut oil (if using) in a small microwave-safe bowl. Microwave in 20-second intervals, stirring after each, until smooth and fully melted (60-90 seconds total).
  10. Drizzle the white chocolate over the cooled bars using a fork, small spoon, or piping bag. Let the drizzle set at room temperature for about 20 minutes, or refrigerate for 10 minutes.
  11. Slice into 16 squares using a sharp chef’s knife, wiping it clean between cuts.

Notes

Don’t overmix the batter to avoid dense bars. Use room temperature ingredients for best texture. Watch baking time closely; bars go from perfect to overbaked quickly. Let bars cool completely before drizzling white chocolate. Bars taste even better the next day. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 7 days. Freeze undrizzled bars for up to 3 months.
