A lighter version of the Starbucks apple crisp oat macchiato that is quick, easy, and made with simple ingredients. This cozy fall drink combines apple cider, espresso, and oat milk for a delicious and healthier coffee shop favorite.

Ingredients

Scale
  • 1 cup (240 ml) apple cider, unfiltered
  • 2 tablespoons (25 g) brown sugar, light or dark
  • 1 tablespoon (15 ml) pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon pure vanilla extract
  • Pinch of salt
  • 2 shots (about 2 oz or 60 ml) espresso or strong brewed coffee
  • 1 cup (240 ml) unsweetened oat milk
  • Ice, if serving cold
  • 2 tablespoons whipped cream (optional)
  • 1/2 teaspoon cinnamon sugar (optional)
  • Crushed dried apple chips (optional)

Instructions

  1. Make the apple crisp syrup: In a small saucepan, combine 1 cup apple cider, 2 tablespoons brown sugar, 1 tablespoon maple syrup, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and a pinch of salt. Stir and bring to a gentle simmer over medium heat. Simmer for 8 to 10 minutes, stirring occasionally, until reduced by about half and slightly syrupy. Remove from heat and stir in 1/2 teaspoon vanilla extract. Let cool.
  2. Brew your espresso or coffee: While the syrup simmers, brew 2 shots of espresso or 2 ounces of very strong coffee using a moka pot, French press, or other method.
  3. Prepare the oat milk: Warm 1 cup unsweetened oat milk in a microwave-safe jar for 45 seconds or in a small saucepan over low heat until steaming (about 150°F). Froth with a handheld frother for 15-20 seconds until creamy and foamy. Alternatively, shake in a jar with a tight lid.
  4. Assemble the hot version: Pour 2 to 3 tablespoons of apple crisp syrup into the bottom of a mug. Slowly pour the hot espresso over the syrup and stir. Pour the frothed oat milk over the back of a spoon held just above the mug to create layers. Spoon the foam on top.
  5. Assemble the iced version: Fill a tall glass with ice. Pour 2 to 3 tablespoons of syrup over the ice. Add the espresso. Pour cold oat milk over everything. Stir before drinking if desired.
  6. Add toppings: If using, add a dollop of whipped cream, sprinkle with cinnamon sugar, and crushed dried apple chips.

Notes

The apple crisp syrup can be stored in the refrigerator for up to two weeks. For a lower sugar version, use monk fruit sweetener or allulose instead of brown sugar and skip the maple syrup. Oat milk is finicky; do not overheat to avoid separation. The syrup is the star—do not rush the reduction.
