A healthier twist on a classic holiday breakfast, this overnight cinnamon roll casserole is quick to prep, uses simple ingredients, and fills your home with the irresistible scent of cinnamon on Christmas morning.

Ingredients

Scale
  • 2 cans (12.4 ounces each) canned cinnamon rolls with icing (preferably Pillsbury Grands! with cream cheese icing)
  • 4 large eggs, at room temperature
  • 1 cup unsweetened almond milk (or any milk)
  • ½ cup plain Greek yogurt
  • 4 ounces reduced-fat cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • Reserved icing from cinnamon rolls (both packets)
  • 2 ounces reduced-fat cream cheese, softened (for topping)
  • 2 tablespoons powdered sugar (optional, for topping)
  • 1–2 teaspoons milk (for thinning topping)

Instructions

  1. Open both cans of cinnamon rolls. Set aside the icing packets. Cut each cinnamon roll into quarters. Scatter the pieces evenly in a greased 9×13-inch baking dish.
  2. In a large mixing bowl, whisk together eggs, almond milk, Greek yogurt, 4 ounces softened cream cheese, vanilla extract, cinnamon, and salt until completely smooth. Pour the custard evenly over the cinnamon roll pieces. Gently press down with a spatula to coat every piece.
  3. Cover the dish tightly with plastic wrap and refrigerate for 8-12 hours (overnight).
  4. Preheat oven to 350°F (175°C). Remove dish from fridge and let sit on counter while oven preheats (about 10 minutes). Bake uncovered for 35-40 minutes, until top is golden brown and center is set (a knife inserted into center comes out clean).
  5. While casserole bakes, prepare topping: In a small bowl, mix reserved icing packets with 2 ounces softened cream cheese and powdered sugar (if using). Add milk 1 teaspoon at a time until drizzling consistency.
  6. Let casserole cool for 5 minutes. Drizzle icing generously over top. Serve warm.

Notes

For best texture, do not let the casserole soak for more than 14 hours. Use room temperature ingredients for a smooth custard. If edges brown too quickly, tent with foil for the last 10 minutes. Let rest 5 minutes after baking for clean slices. Not recommended for freezing.
