A bright, fresh twist on classic chicken noodle soup, featuring lemon and dill for a light, spring-like flavor. This quick and easy recipe comes together in about 45 minutes and is perfect for any season.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 medium carrots, peeled and sliced into half-moons (about 1 cup)
  • 3 celery stalks, sliced (about 1 cup)
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 2 cups cooked, shredded chicken
  • 1 ½ cups wide egg noodles
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons fresh lemon juice (about 1 large lemon)
  • 2 teaspoons lemon zest
  • ¼ cup fresh dill, chopped
  • Optional: ¼ cup heavy cream or full-fat coconut milk

Instructions

  1. Sauté the aromatics: Heat olive oil in a Dutch oven over medium heat. Add onion, carrots, and celery. Cook, stirring occasionally, until onions are translucent and vegetables have softened slightly, about 8 minutes. Add garlic and cook for 30 seconds until fragrant.
  2. Build the broth: Pour in chicken broth and bring to a gentle boil over high heat. Reduce heat to medium-low and simmer for 10 minutes. Add salt and pepper.
  3. Cook the noodles separately: In a separate pot, cook egg noodles according to package directions until al dente. Drain and set aside.
  4. Add the chicken: Add shredded chicken to the pot and let heat through for 3-4 minutes.
  5. The lemon-dill finish: Remove pot from heat. Stir in fresh lemon juice, lemon zest, and chopped dill. Taste and adjust seasoning.
  6. Combine and serve: Place a portion of cooked noodles in each bowl, then ladle hot soup over the top. Garnish with fresh dill and a lemon slice if desired.

Notes

Don’t boil the lemon; add it off heat to preserve brightness. Zest the lemon before juicing. Use fresh dill for best flavor. Season in layers. Store noodles separately from broth for leftovers. Soup tastes even better the next day.
