This slow cooker wassail is a warm, spiced drink made with apple juice, orange, cloves, and cinnamon sticks. It’s incredibly easy to prepare with just 5 minutes of prep time, and the slow cooker does all the work, filling your home with a cozy holiday aroma.

Ingredients

Scale
  • 8 cups (64 ounces) apple juice
  • 1 large orange, sliced into rounds
  • 2 tablespoons whole cloves
  • 3 to 4 cinnamon sticks, broken in half
  • 2 to 3 tablespoons honey or maple syrup (optional)
  • 1/2 cup fresh or frozen cranberries (optional)

Instructions

  1. Wash the orange thoroughly and slice it into rounds about 1/4-inch thick. Remove any seeds.
  2. Pour the apple juice into a 6 to 7-quart slow cooker. Add the orange slices, whole cloves, and cinnamon sticks. If using optional sweetener or cranberries, add them now. Stir gently to combine.
  3. Cover the slow cooker and set to LOW for 3 to 4 hours or HIGH for 1.5 to 2 hours. For best flavor, use the low setting.
  4. After 2 hours on low, taste the wassail. If you want a stronger clove flavor, let it simmer longer. If too strong, add more apple juice to dilute.
  5. When ready, ladle the wassail through a fine-mesh strainer into a large pitcher or directly into mugs to catch the cloves and cinnamon pieces.
  6. Serve warm. For kids, let it cool for a few minutes before serving.

Notes

Don’t skip the straining step to avoid biting into whole cloves. Start checking flavor after 2 hours on low to prevent over-spicing. For a milder version, use only 1 tablespoon of cloves. The wassail can be kept on warm setting for up to 4 hours. Leftovers can be refrigerated for up to 5 days or frozen for up to 3 months.
