These buttery blondies are packed with tart dried cranberries and creamy white chocolate chips, then finished with a gorgeous white chocolate drizzle. They’re quick, easy, and absolutely irresistible—perfect for family snacks, bake sales, or any occasion.

Ingredients

Scale
  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup (200g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup (90g) dried cranberries
  • ½ cup (90g) white chocolate chips (for the batter)
  • ¼ cup (45g) white chocolate chips, melted (for the drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. In a large microwave-safe bowl, melt the butter. Let it cool for 1-2 minutes.
  3. Add the brown sugar and granulated sugar to the melted butter. Whisk until smooth and combined.
  4. Add the egg and vanilla extract. Whisk vigorously until the mixture is thick, glossy, and pale, about 30 seconds.
  5. In a separate small bowl, whisk together the flour, baking powder, and salt.
  6. Pour the dry ingredients into the wet mixture. Fold gently with a spatula until just combined (a few streaks of flour are okay).
  7. Fold in the dried cranberries and ½ cup white chocolate chips until evenly distributed.
  8. Scrape the batter into the prepared pan and spread into an even layer. The batter is thick—use a spatula to press it into the corners.
  9. Bake for 22-25 minutes, until the edges are golden brown and the center is set but still soft. A toothpick inserted in the center should come out with a few moist crumbs.
  10. Let the blondies cool in the pan on a cooling rack for at least 30 minutes. Then lift them out using the parchment overhang and cool completely on the rack.
  11. Once completely cool, melt the remaining ¼ cup white chocolate chips in a small microwave-safe bowl in 20-second bursts, stirring between each, until smooth.
  12. Drizzle the melted white chocolate over the blondies using a fork or small piping bag. Let the drizzle set for 15-20 minutes (or 5 minutes in the fridge) before slicing.

Notes

Don’t overmix the batter—mix until just combined to avoid tough blondies. Use room temperature eggs for best texture. For clean slices, run a sharp knife under hot water, wipe dry, then slice, wiping the blade between cuts. Store in an airtight container at room temperature for up to 5 days. Freeze for up to 3 months.
