A foolproof apple crisp with unpeeled apples and a buttery oat crumble topping. Quick to prepare and perfect for family dinners or potlucks.

Ingredients

Scale
  • 6 medium apples, unpeeled, cored and sliced into ¼-inch thick pieces (Honeycrisp or Granny Smith recommended)
  • ¼ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 cup old-fashioned rolled oats
  • ½ cup all-purpose flour
  • ½ cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash apples thoroughly, cut in half, then into quarters. Remove core and seeds, then slice each quarter into 3-4 pieces about ¼-inch thick. Toss sliced apples into a large mixing bowl.
  3. To the bowl of sliced apples, add granulated sugar, 2 tablespoons all-purpose flour, 1 teaspoon cinnamon, nutmeg, and lemon juice. Toss until every apple slice is coated. Set aside.
  4. In a medium mixing bowl, combine old-fashioned oats, ½ cup all-purpose flour, brown sugar, 1 teaspoon cinnamon, and salt. Whisk together. Add cold, cubed butter. Use a pastry cutter, two forks, or your fingertips to work the butter into the dry mixture until it looks like coarse sand with some pea-sized butter pieces remaining.
  5. Lightly grease a 9×13-inch baking dish. Pour the apple mixture into the dish and spread into an even layer. Sprinkle the oat crumble evenly over the top.
  6. Bake on the middle rack for 40-45 minutes, until the topping is golden brown and the apple filling is bubbling around the edges. If topping browns too quickly, tent with foil for the last 10 minutes.
  7. Let the crisp cool on a wire rack for at least 10-15 minutes before serving.

Notes

For best results, use a mix of Honeycrisp and Granny Smith apples. Old-fashioned rolled oats are essential; quick oats will make the topping soggy. Cold butter is crucial for a crunchy crumble. Let the crisp rest before serving to allow the filling to set.
