This sweet and caramelized roasted honeynut squash is a kid-approved side dish that tastes like dessert. With just 5 minutes of prep and simple ingredients, it’s the perfect way to get everyone at the table to eat their vegetables.

Ingredients

Scale
  • 2–3 medium honeynut squash
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ⅛ teaspoon nutmeg (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash the honeynut squash thoroughly. Cut each squash in half lengthwise and scoop out the seeds and stringy pulp.
  3. In a small bowl, combine the melted butter, brown sugar, cinnamon, salt, and optional nutmeg. Stir until smooth.
  4. Place the squash halves cut-side up on the prepared baking sheet. Brush or spoon the cinnamon butter mixture evenly over the cut surfaces.
  5. Roast for 30-35 minutes, until the squash is fork-tender and the edges are golden brown and caramelized. For extra caramelization, broil for 1-2 minutes, watching carefully.
  6. Let the squash rest for 5 minutes before serving. Serve whole or sliced into half-moons, spooning any pan juices over the top.

Notes

For dairy-free, use coconut oil or plant-based butter. For lower sugar, reduce brown sugar to 1 tablespoon. If squash sizes vary, check smaller ones earlier. To prevent burning, tent with foil if sugar darkens too quickly. Leftovers keep in the fridge for up to 4 days; reheat in a 350°F oven for 10 minutes.
