These air fryer cinnamon sugar pumpkin seeds are a quick, easy, and addictive snack that’s perfect for any occasion. With a crunchy, caramelized coating and warm cinnamon flavor, they’re a crowd-pleaser that comes together in just 15 minutes.

Ingredients

Scale
  • 1 cup (120 g) raw, unsalted pumpkin seeds (pepitas)
  • 2 tablespoons (28 g) unsalted butter, melted
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon (2.6 g) ground cinnamon
  • 1/4 teaspoon (1.5 g) salt
  • 1/2 teaspoon (2.5 ml) vanilla extract (optional)

Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. If using fresh pumpkin seeds, rinse them in a colander under cold water and remove any stringy pieces. If using store-bought raw seeds, skip this step.
  3. Dry the seeds thoroughly: spread them on a clean kitchen towel or paper towels, pat dry, and let sit for about 10 minutes until completely dry.
  4. Melt the butter in a small microwave-safe bowl (20-30 seconds).
  5. In a small bowl, mix together the sugar, cinnamon, and salt.
  6. Place the dried pumpkin seeds in a paper bag or large zip-top bag. Pour the melted butter over the seeds, then add the cinnamon-sugar mixture (and vanilla extract if using). Seal the bag and shake vigorously for about 30 seconds until all seeds are coated.
  7. Spread the coated seeds in a single layer in the air fryer basket. Avoid overcrowding; work in batches if needed.
  8. Air fry for 8-10 minutes, shaking the basket halfway through (at 4 minutes). Check at 8 minutes; seeds should be golden brown. Cook 1-2 minutes more if desired.
  9. Remove seeds from the air fryer and spread them on a plate or parchment paper to cool completely (at least 10 minutes). They will become crunchier as they cool.
  10. Serve at room temperature. Store leftovers in an airtight container at room temperature for up to a week.

Notes

Make sure seeds are completely dry before coating to ensure crispiness. Watch the seeds during the last few minutes of cooking as sugar can burn quickly. Let seeds cool completely before storing to maintain crunch. For a dairy-free version, use coconut oil or avocado oil instead of butter. For a low-sugar option, use monk fruit sweetener or erythritol (texture may vary).
