  • 1/3 cup (80g) natural peanut butter (creamy or chunky, no sugar added)
  • 2 large eggs, room temperature
  • 1/4 cup (60ml) honey or maple syrup
  • 1 3/4 cups (220g) whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup (60g) chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5 inch loaf pan with butter or line it with parchment paper for easy removal.
  2. Mash the bananas in a large bowl using a fork or potato masher until smooth but with a few small lumps remaining (about 2-3 minutes).
  3. In a separate bowl, whisk together the Greek yogurt, peanut butter, eggs, honey (or maple syrup), and vanilla extract until fully combined and smooth.
  4. Pour the wet mixture into the mashed bananas and stir gently with a spatula until blended. Do not overmix.
  5. In another bowl, sift together the whole wheat flour, baking soda, baking powder, cinnamon, and salt.
  6. Fold the dry ingredients into the wet ingredients in two additions, folding gently after each until just incorporated.
  7. Fold in chopped walnuts or pecans if using.
  8. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  9. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Check at 50 minutes to avoid overbaking.
  10. Cool the bread in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.

If peanut butter is thick or cold, warm slightly in microwave for 15 seconds before mixing. Use ripe bananas with brown spots for best sweetness and moisture. Avoid overmixing to keep bread light and tender. Tent loaf with foil halfway through baking if top browns too fast. Let bread cool fully before slicing for best texture. Use kitchen scale for flour for consistent results.
