  • 4 whole wheat tortillas or large lettuce leaves
  • 4 tablespoons cream cheese, softened
  • 1 tablespoon fresh dill or chives, finely chopped
  • 1/2 cup shredded carrots
  • 1/2 medium cucumber, thinly sliced or julienned
  • 1 small red bell pepper, thinly sliced
  • A handful of baby spinach or arugula
  • 4 thin slices cheddar cheese (optional)
  • Salt and pepper to taste
  • A splash of lemon juice (optional)

Instructions

  1. In a small mixing bowl, combine 4 tablespoons of softened cream cheese with 1 tablespoon of finely chopped fresh dill or chives. Mix well until smooth.
  2. Wash and dry the vegetables. Shred 1/2 cup of carrots, thinly slice half a cucumber, and cut 1 small red bell pepper into thin strips. Toss the veggies lightly with a splash of lemon juice and a pinch of salt.
  3. Place 4 whole wheat tortillas or large lettuce leaves flat on a clean surface. If using tortillas, warm them slightly in a dry pan or microwave for 10 seconds to make rolling easier.
  4. Spread an even layer of the herb cream cheese over each tortilla or lettuce leaf using a spatula or butter knife.
  5. Lay 2 ounces of thinly sliced turkey breast evenly over the cream cheese on each wrap. Top with a slice of cheddar cheese if using.
  6. Distribute the shredded carrots, cucumber slices, red bell pepper strips, and a small handful of baby spinach or arugula evenly over each wrap.
  7. Carefully roll each tortilla or lettuce leaf tightly, tucking in the sides slightly to keep everything secure. If using tortillas, slice each roll-up in half for easier eating.
  8. Place the roll-ups neatly in your bento box compartments. Add extras like fresh fruit, nuts, or a small dipping container of hummus if desired.
  9. Keep the bento box refrigerated until ready to eat. The roll-ups hold well for several hours and taste best slightly chilled.
