This healthy Greek yogurt pumpkin bread is completely oil-free, naturally sweetened, and packed with protein. It’s a one-bowl wonder that stays moist for days and is perfect for fall baking.

  • 1 cup (245g) pumpkin purée (100% pumpkin, not pie filling)
  • ¾ cup (170g) plain Greek yogurt (full-fat or 2%)
  • 2 large eggs, room temperature
  • ½ cup (120ml) pure maple syrup
  • ¼ cup (40g) coconut sugar
  • 1 teaspoon vanilla extract
  • 1¾ cups (210g) whole wheat flour (white whole wheat or all-purpose works)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • Optional: ½ cup dark chocolate chips, chopped walnuts, or dried cranberries

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly spray exposed pan edges with cooking spray.
  2. In a large mixing bowl, whisk together pumpkin purée, Greek yogurt, eggs, maple syrup, coconut sugar, and vanilla extract until smooth.
  3. Add whole wheat flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon to the same bowl. Stir with a spatula until just combined. Do not overmix. Fold in optional mix-ins if using.
  4. Pour batter into prepared loaf pan and spread evenly. Sprinkle extra coconut sugar on top for a crunchy crust if desired.
  5. Bake on the middle rack for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if browning too quickly.
  6. Cool in the pan for 10 minutes, then lift out using parchment paper and transfer to a wire rack. Cool completely (at least 1 hour) before slicing.

Notes

Do not overmix the batter to avoid tough bread. Let the bread cool completely before slicing to prevent a gummy texture. For best results, use room temperature ingredients. Check baking soda freshness for proper rise.
