  • 1 whole turkey (1214 pounds), thawed if frozen
  • 1 cup unsalted butter, softened to room temperature
  • 810 cloves of garlic, minced or grated
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons fresh sage, finely chopped
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • 1 lemon, halved
  • 1 onion, quartered
  • Salt and freshly ground black pepper, to taste
  • 2 cups chicken or turkey broth
  • Optional: 1/2 cup dry white wine, for deglazing

Instructions

  1. Prep the turkey: Remove the turkey from its packaging. Take out the giblets and neck from the cavities. Pat the turkey completely dry with paper towels. Let the turkey sit at room temperature for about 30 minutes.
  2. Make the herb butter: In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, and sage. Add a generous pinch of salt and pepper. Mix until evenly distributed.
  3. Loosen the skin: Gently slide your fingers under the skin of the turkey breast, starting from the neck cavity. Work your way down, being careful not to tear the skin. Create a pocket between the skin and the meat on both sides of the breast and over the thighs.
  4. Apply the butter: Take about two-thirds of the herb butter and push it under the loosened skin. Use your fingers to spread it evenly over the breast meat and thighs. Rub the remaining butter all over the outside of the turkey skin.
  5. Season the bird: Sprinkle the turkey generously with salt and pepper, both inside the cavity and all over the skin. Place the lemon halves and onion quarters inside the cavity.
  6. Truss the turkey: Tuck the wing tips under the bird. Tie the legs together with kitchen twine.
  7. Set up the pan: Pour the chicken broth into the bottom of your roasting pan. Place the turkey on the rack in the pan.
  8. Roast the turkey: Preheat your oven to 425°F (220°C). Roast for 30 minutes. Reduce the oven temperature to 350°F (175°C). Continue roasting for about 13 minutes per pound.
  9. Baste occasionally: Every 45 minutes, baste the turkey with the pan juices. If the skin is getting too dark, tent the turkey loosely with aluminum foil.
  10. Check for doneness: About 30 minutes before the estimated time, start checking the temperature. Insert your thermometer into the thickest part of the thigh, avoiding the bone. You’re looking for 165°F (74°C). The breast should be around 160°F (71°C).
  11. Rest the turkey: Once done, transfer the turkey to a large platter or carving board. Let it rest for at least 20-30 minutes. Tent it loosely with foil to keep it warm.
  12. Make the gravy (optional): While the turkey rests, pour the pan drippings into a fat separator. Skim off the fat. Place the roasting pan on the stovetop over medium heat. Add a splash of wine or broth and scrape up the browned bits. Pour in the defatted drippings and whisk in a slurry of flour and water (about 2 tablespoons each) to thicken. Simmer for a few minutes, then season to taste.

Notes

Don’t skip the drying step for crispy skin. Loosen the skin gently to avoid tearing. Use a thermometer, not a timer, for doneness. Let the turkey rest for at least 20-30 minutes before carving. Season the cavity too. For a dairy-free version, use vegan butter or olive oil.
