  • 2 tablespoons chili crisp (e.g., Fly By Jing or Lao Gan Ma)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon soy sauce (low sodium preferred)
  • 1 clove garlic, minced
  • 1 teaspoon sugar
  • Salt, to taste
  • 1 tablespoon toasted sesame seeds (optional)
  • Fresh cilantro or scallions, chopped (optional)

Instructions

  1. Rinse 2 large English cucumbers and trim off the ends. Cut each cucumber into roughly 2-inch lengths for easier smashing.
  2. Wrap a cucumber piece in a clean kitchen towel or plastic wrap. Gently but firmly press down with a rolling pin or meat mallet until the cucumber slightly cracks and splits open. Repeat with all pieces.
  3. In a small bowl, whisk together 2 tablespoons chili crisp, 1 tablespoon toasted sesame oil, 1 tablespoon rice vinegar, 1 teaspoon soy sauce, 1 teaspoon sugar, and 1 minced garlic clove until sugar dissolves.
  4. Transfer the smashed cucumbers to a large mixing bowl. Pour the dressing over and toss gently to coat every piece. Let it rest for 5-10 minutes to marinate.
  5. Sprinkle toasted sesame seeds and chopped cilantro or scallions on top. Taste and adjust salt if needed. Serve chilled or at room temperature.

Notes

Do not over-smash cucumbers to avoid mushiness. Drain excess liquid if cucumbers feel too watery before tossing with dressing. Let salad rest for 5-10 minutes to allow flavors to meld. Use tamari and vegan chili crisp for gluten-free and vegan versions. Adjust chili crisp amount to control heat level.
